Sensational Saturday: Polka Dot Cake
Taste and vision–two senses today!
I saw this and had to try it. Please keep in mind that this was my first attempt at this cake. The polka dots are made of cake balls baked in a pan designed just for making small round spheres of cake. I used packages of jello for coloring and flavoring of the green and orange balls. I used lemon cake mix for the yellow balls. We chose a citrus theme, so the balls are lime, orange, and lemon, and the icing is flavored orange as well. Once the balls are baked, I trimmed them a bit (there is a bit of a cake ring around them where the tops and bottoms come together). I made a white cake mix for two of the layers, and a yellow cake mix for the middle layer. I arranged the cake balls in small round cake pans and poured cake batter over them, about 3/4 of the way up the cake balls. The pans were baked, so, yes, the cake balls get baked twice. Once I had three layers completely baked, it was simply a matter of assembling them with icing. Everyone gathered around when it came time to slice the cake–there were oohs and aahs as the polka dots were revealed.
