Sensational Saturday: Delicious Spread and Sprinkle Cookies
Cookies that only need assembling (no baking) can be loads of fun. These are a wonderful treat, quick and easy, and yet with a touch of class. This recipe allows great leeway for personalizing it to suit your tastes or the ingredients you may presently have handy.
1/2 cup Chocolate chips, chunks, or melting chocolate
2 very thin slices of butter
1 package of shortbread cookies from your cookie aisle (already cooked)
1 TB instant espresso stirred into just enough milk to make it a thick liquid
1/4 cup chopped candy topping (we used toffee bits but anything that suits your taste will do, nuts work well too)
Slowly melt your chocolate and butter (double boiler is ideal), stirring with a rubber spatula.
Serve with coffee and enjoy the buttery taste of the cookies, the chocolate, the coffee flavoring, and the crunch of the candy bits.
