Sensational Saturday: Lemon Meringue
There was just a bit of pie dough left, not enough for a whole pie and certainly not enough for a big, deep-dish pie, the kind we like. As children, we would be given the extra dough to make a cinnamon and sugar “pie,” but we do not have any children at home right now. Lemon meringue pie appealed to me so I pulled out a smaller pan, not even a pie pan, and made the lemon pudding and whipped up that meringue. The left-over dough was just the right amount for this stoneware pan and, after baking the crust, the lemon and meringue were added. The meringue top was browned and a simple and easy sweet was complete! The extra lemon pudding went into small dessert dishes, enough for two.
