Sensational Saturdays: Taste of Broccoli Fritatta

Frittatas are like lazy man’s omelets to me.  This recipe is so simple that I am the one that gets to make it in our house.

5-6 eggs

1/2 cup milk or cream

1 cup broccoli

1 cup cheddar cheese

2 tsp onion powder

1 tsp garlic powder

cilantro, salt and pepper to taste

Beat the eggs, add the milk and spices, blend well.  Pour into a souffle pan and spread broccoli and cheese evenly.  Bake for 30 minutes at 375 or until solid.

For some variation, we like to use asparagus, tarragon, and asiago instead and the traditional recipe calls for grated parmesan.
