Sensational Saturday: Tasty Tortilla Soup
Homemade tortilla soup is delicious. From the way that its aroma drifts through the house, the way that it tastes, the way that the colors attract our eyes, and the way that it warms our tummies.
Here is our recipe (it’s soup, so amounts are flexible)
Bake or grill one boned and skinless chicken breast; dice it once it’s cooked
Chop 1 large onion, 2 jalapeno peppers (remove seeds), and 6 cloves of garlic; saute these with just enough olive oil until translucent
Chop up 1/2 cup cilantro leaves
Add one cup tomato sauce, 2 TB tomato paste, 6 cups water, 6 ts chicken bouillon, and 3 TB lime juice to a soup pot or crock pot. Add the onion, peppers, garlic, and cilantro to the pot. Cook until your kitchen smells good. Use an emulsifier or blender to blend the soup (optional). Add the chicken and cook until the chicken is tender, 10 minutes or you can leave it lingering in the flavors for a few more hours.
To serve, put some grated cheese (cheddar is tasty) and some slices of tortilla or taco chips in a bowl. Spoon the soup mixture over the cheese and chips.
Supplemental ingredients: we like: brown rice, barley, roasted corn, any other vegetable that you have, avocado, and sour cream.
